“I just want to try something different, eventually our plan is to move down the coast, but for now it’s just try something new.”

Josh McCarthy has been a baker for 18 years. Over half his life. He has owned the Outback Bakery since November 2011. It opened in 2005 before he took it over 6 years later.

He has seen a number of changes in the industry and with the products sold.

He said, “You move with the trends, sourdoughs and slow fermented doughs weren’t very popular, where as now they are becoming common. Different cakes and sweets have changed along the time. Some things have stayed the same. Pies, Sandwiches and Bacon and Egg Rolls are a core part of the business.”

Josh and the staff at the Outback Bakery have a loyal and lengthy clientele. The Bakery is a Platinum Sponsor for the Cootamundra Tricolours, who won the South West Rugby Championship on Saturday against Harden.

They also supply the Coota Blues, Coota Strikers, Junior Soccer, Coota Squash Club and the Arts Centre and IGA.

And, they look after Harden Junior League and Soccer as well as the Harden Hunting Club.

Josh said, “It gives you creative freedom when you work for yourself. It gives you the opportunity as a Baker to have unlimited earning potential.”

Josh and partner Bec are expecting another baby which will expand the growing young family. The 35 year old local has been an instrumental part of the Cootamundra community and is involved in Squash, Rugby and enjoys riding his bike.

He loves the fact people in Coota are community orientated. He said, “Everyone looks out for each other and they get in behind a cause.”

The Outback Bakery does a roaring trade and sells plenty of coffee. Sales are strong at 18kg+ per week. The café/bakery also serves breakfasts, a range of sandwiches, burgers and pastries and desserts along with over 1000 high profit pies and sausage rolls per week.

The range of sourdough and artisan style breads are also very popular with the locals.

 The Outback Bakery employs 9 Staff in total including a full time Manager, part time Baker and Pastry Chef.

The lease is set out as 10 + 5 + 5 year lease which commenced in October 2011. – No rent increases.

The Outback Bakery is open 6 days a week and can cater for 20 people inside and 8 people outside.
