Mayor John Horton had the pleasure of opening the very tasteful alfresco area under fairy lights, at Jackson’s Bakery and Café recently. Friends and relatives were invited to the cocktail party which preceded the opening. Trent and Nicole said that it had taken some time to revamp the area. It had been a work in progress for most of the three years since they had opened. Nicole thanked her staff, for their patience whilst she was otherwise engaged with the courtyard area.

They thanked the local tradesmen who assisted with the renovation. Nicole said that many of the objects that make up the courtyard were sourced from near and far. The old bricks which paved the courtyard came from Jugiong. The planter boxes were bridge sleepers sourced from the Bungendore to Captain’s Flat line. The large posts for the deck came from a paper mill in Gympie in Queensland. The entrance gate was the original gate that Alan and Julie Elliott had placed between the Hotbake and Harden Tyre Service. Objects in the courtyard include a vice for a workbench which originally belonged to Tony Briggs. Two rather attractive fireplace surrounds came from an auction. Nicole said the McMahon’s Reef No. 5 sign had special significance as she had travelled on that bus all her school years and now her 5 children travel on the same bus. Friends and relatives assisted with other rustic objects that will make outdoor dining a pleasure at Jackson’s Bakery and Café. The plants and trees reflect a kitchen theme. Fruit trees such as lemon, orange, mandarin, cumquat, quince, pear, Granny Smith apples, grapes and olives being represented. Herbs including rosemary lend a scent to the courtyard.

On the opening night, Nicole thanked her good friend Melissa McColl from Gusollios Hair Salon in Young for her assistance and David Brassington from David’s Garden who provided many of the large trees and shrubs. David said he made quite the spectacle when he wheeled large plants into the area. Nicole joked that David came to water them regularly and guaranteed their survival. Nicole and Trent said they were very happy with the result. When asked what their next project would be? Nicole replied, “Our next plan is the corner store, but you will have to wait for more on that!”
